The inevitable New Year’s Resolutions… we all did it. Promising yourself you will join the gym this year, become a less-stressed, more-Zen version of yourself, or stop drinking too much wine on a Friday night. Most resolutions are destined to fail, unless you have a good reason to stick to them. That’s why Veganuary is one of the best resolutions. Not only are you helping yourself, but the planet too.
Veganuary involves following a plant-based, vegan diet for the month of January. There are many benefits to following a vegan diet and lifestyle. However, not everyone is ready to commit to a plant-based way of life. And that’s okay! Making small changes can really reduce your carbon footprint.
New studies have shown that ‘a portion of the highest-impact vegetable proteins emits less than the lowest-impact animal proteins’ (BBC, 2018). This insightful article shows how reducing your meat and dairy intake can positively impact the planet and make the environment a better place for everyone. There is even a ‘climate change footprint calculator’.
This blog post is not written to make anyone feel guilty about their life choices. After all, it’s not about beating yourself up for not doing enough – it’s about doing your bit! This is what Veganuary encourages. Why not give it a go and see what new recipes you can discover, whilst knowing you are doing your bit for the planet. And of course, you won’t be missing out on Liberty Loves treats – they are all vegan!
Here is an easy, healthy meal idea to try out this Veganuary:
Slice firm tofu, 1-2cm thick
Coat tofu in corn flour and lightly fry in Fry Light Oil Spray until golden
Roast your favourite veggies in oil, salt and paprika
Add bean shoots and kimchi
Steam spinach and sprinkle with sesame seeds
Serve and enjoy!
(top tip: drizzle a balsamic glaze or soy sauce over the dish just before serving)
