If you’re looking to whip up something quickly that tastes amazing, try this gluten-free, vegan loaf. My customers’ favourite is the banana and walnut version, but I also love it with stem ginger and orange zest. Or try sour cherries and almonds, yum…
Give it a try and let me know what you think!
250g gluten-free flour
150g caster sugar
½ tsp baking powder
½ tsp bicarbonate of soda
220ml almond milk
120ml rapeseed oil
1 banana – smashed with a fork
1 handful of walnuts*
1.Preheat the oven to 160 degrees.
2.Mix all the ingredients together in a bowl and pour mixture into a loaf tin.
3.Bake for 35-40 minutes, until it resembles the picture below.
*Or you can switch out the banana and walnuts for your own variations, try:
– stem ginger and orange
– chocolate chip
– sour cherry and almond flakes
