Liberty Loves Gluten-Free Vegan Loaf

Ingredients

250g gluten-free flour

150g caster sugar

½ tsp baking powder

½ tsp bicarbonate of soda

220ml almond milk

120ml rapeseed oil

1 banana – smashed with a fork

1 handful of walnuts*

Method

1.Preheat the oven to 160 degrees.

2.Mix all the ingredients together in a bowl and pour mixture into a loaf tin.

3.Bake for 35-40 minutes, until it resembles the picture below.

*Or you can switch out the banana and walnuts for your own variations, try:

– stem ginger and orange

– chocolate chip

– sultana

– sour cherry and almond flakes

Vegan festivals

I had a great day at the Kent Vegan Festival in Canterbury last weekend. It was fab to meet some Vegan Tuck Box customers who were looking for more raw tarts!
